Baked Hummus Balls

Ever since I made Kris’ bean balls, I’ve wanted to make them again.  They were too easy and too good!  The other night it occurred to me that a hummus style baked ball would probably turn out delicious.  I was right.

Baked Hummus Balls

  • One can chickpeas, rinsed and drained
  • One can white beans, rinsed and drained
  • Two packets True Lemon
  • 1 tbsp tahini
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 3 tbsp brown rice flour
  • olive oil

Combine all the ingredients in the food processor save for the olive oil and pulse until combined.  Some stopping and scraping down the sides may be necessary. Then drizzle in olive oil while the processor is running until a doughy consistency is reached.  Scoop into balls onto a cookie sheet and bake at 400 degrees for 20 minutes.

I was extremely pleased with the results… delicious hummus flavor in a fun ball shape!

Soft on the inside, a little crunchy on the outside… perfect.

I served mine with some zucchini sauteed in olive oil.  I forgot how much I love zucchini, it’s been too long!

These would make a fun appetizer but can definitely hang as the main part of a meal as well.  So awesomely versatile!  :)

I’ve been mega busy as usual, getting my ducks in a row for when we move next month (potential rental house AWESOMENESS that I can hopefully divulge very soon!), participating in the internship clinic (soooo loving it, and my clients are loving me too!), working overtime as I can, and getting in some seriously righteous bike rides.  I want to take my camera with me next time so I can get some shots of the trail I ride on for you guys.  I miss you all bunches!  xo

Gotta go pack tomorrow’s lunch, shower, and hop in bed!

      Yeah, I always sub the same amount of brown rice flour for the flour called for in various recipes with good success! :)

      True Lemon is just cold pressed and crystallized lemon that subs for real lemon in recipes. They have a True Lime and True Orange variety as well. I hardly ever remember to keep limes or lemons in the house, so I love having that stuff around. Tastes just like the real thing!

  17. Oh my gosh, baked hummus balls! What a fantastic idea :) I love grilled zucchini too so it was so great to see that they go well together- definitely one of my favourite veggies! Have to try this one for sure!
