Biscuits and Balls a la Kris

Progressive approved overtime for us this week, so I worked 2 hours after my shift ended last night, went in for 5 hours on my day off today, and will be staying an additional 2 hours tomorrow night.  Makin’ that dollaaaaaa!

I’ve been craving bread products lately, so when I saw Kris’ gluten-free biscuits, I knew I had to make them.

They might look like sugar cookies, but I assure you they are lovely biscuits! I chose to leave out the savory spices so I could just have a plain biscuit instead. I used the Bob’s Red Mill all-purpose gluten-free flour and almond milk subbed for rice milk, and they turned out fantastic!  I ate one with jelly and one with Marmite!

This may very well be my new go-to biscuit recipe!

I’ve also been eying Kris’ bean balls (heh, balls) lately too, so while I had a moment in the kitchen I decided to whip up a batch of those as well!  I didn’t have navy beans so I actually used a can of garbanzo beans in addition to the pintos. I used 1/4 tsp cayenne, 1/2 tsp cumin, 1/2 tsp Mrs. Dash Southwestern Chipotle, and since I didn’t have any salsa I just drizzled in water while everything was whirring around the food processor until it reached a nice doughy consistency.  Rolled into balls, popped in the oven, and devoured!

Alex liked them too, which is always a testament to an awesome recipe since he’s a bit picky!  I served them up with some Normandy blend veggies heated in this sauce.

Pretty awesome sweet and spicy combo of flavors!

I’m off to head out on a bike ride and then off to belated birthday celebration dinner with Alex (our schedules finally synced up, hoorah!) courtesy of a little birthday money from his folks.  I hope you guys are having lovely weekends and doing much more exciting things than working overtime!  (Not bitching… well, not too much anyway!)  ;)

  2. Biscuits remind me of my grandmother. I used to make them with her all the time. I LOVE baking them for my family now. Such great memories! Have fun with Alex!

  8. I’ve never tried making gluten free bread before, but I’m interested in trying some gluten free baking these days. I’ll take one with jelly please!! Those beans balls sound awesome by the way! I made some red lentil bulgar balls not too long ago that I fell in love with so I’ll bookmark this page so I can come back here and grab the recipe when I’m ready to try yours. You think they would fry up okay? I’m mean, baking them is fine, but I’d like to fry them and really indulge myself! :)
