Vegan Baked Potato Soup

Alternative title… The Potatoes Have Eyes.

I had some fingerling potatoes that were trying to take root in my kitchen and needed to be used ASAP.  Baked potato soup popped into my head, but how to make it dairy-free and still capture that creamy deliciousness… hmmm.  I thought up a game plan as I chopped my potatoes (after peeling off the eyes and rinsing them well) and tossed them in the crockpot.

I decided on coconut milk for the base, nooch for the cheesiness, and smoked paprika for the bacon-y flavor (didn’t have any actual bacon on hand).

I threw a little of this and that in the pot and left it to cook on high while I ran errands. When I returned 3 hours later, the potatoes were soft and the flavor was awesome.

I took the immersion blender to the batch until it was uniformly smooth and creamy.

And alas, I had done it.  Made the perfect batch of baked potato soup, that just so happened to be vegan.

Vegan Baked Potato Soup

  • 2.5 pounds or so of fingerling potatoes (or whatever potatoes, really), rinsed and chopped
  • 4 cups veggie broth
  • one can full-fat coconut milk
  • one small white onion, coarsely chopped
  • 1/4 cup nooch
  • 1 tsp apple cider vinegar
  • 1 to 1.5 tsp garlic powder
  • 1 to 1.5 tsp smoked paprika
  • heavy pinch of Hawaiian alaea red sea salt (because I bought some fancypants salt at Central Market, use whatever sea salt your heart desires)
  • fresh cracked black pepper

Fancy-ass salt.

Put all ingredients in the crockpot.  Leave it on high for 3 hours.  Blend it up.  Eat that shiz.

I am seriously so proud of this soup!  Perfect cheesiness from the nooch, smoky bacon-ness from the smoked paprika, thick creamy texture… amazing!  It passed the Alex and bestieroomie taste tests, as well as a coworker who requested I bring her some.  You should really make this soup, you won’t be disappointed!  And isn’t it about time I showcased something other than salad beasts for you?  :)

Another looooong day tomorrow… work all day, making up a class I missed a while back when Rambo hurt his back tomorrow night… will be gone from 6:45 a.m. to 10:15 p.m.!  So uhhh…. g’night!

    Genius! I’d never really thought to make baked potato soup because all I think of is dairy creaminess. Clearly I’m not using innovative skills like you are down there in Austin!       I was pretty impressed with the fancy-ass salt. It has a slightly smoky flavor to it that really added some depth to this recipe! :)

    I also have an immersion blender, and when I used it to make a cream soup I had the stuff all on myself. :( Perhaps I need to take a bigger pot and fill it better next time. ;)

    Great idea to use coconut milk to make it creamy. I love putting some in the fridge and eating the coconut cream. Yum! I’ve never tried baked potato soup, but yours sure sounds delicious!

  17. Haha, my potatoes always look like that! I buy them in bulk, so a few of them always grow roots :) My mom always tells me not to eat them, but I do anyway and I’ve never died because of it…
