Beaten Into Submission

This post is gonna be short and sweet.  The night person in me is getting beaten into submission, and I’m pretty worn down and in need of a good night’s sleep… these 6:15 a.m. mornings are no joke!

I owe you guys some tahini and hummus talk.

First up, tahini.

So I made my own tahini, though it’s different than store bought in that apparently the pros separate the bran from the kernel.  I will say that I think the taste isn’t that much different, and I thoroughly enjoyed it in my oats this morning.  To make it, I toasted two cups of sesame seeds in a pan on the stove for a few minutes, transferred them to a bowl where I let them cool, and then processed them with 1/3 cup macadamia nut oil until smooth.  Easy peasy!

I ate some cheezy hummus and potatoes for a snack after work today… lazy lady’s potato salad.  :)

Cheezy Hummus

  • 2 cans chickpeas, liquid reserved
  • 1/2 cup nooch
  • 2 tsp tahini
  • 3/4 tsp sea salt
  • 1/2 tsp True Lemon
  • 2 tsp garlic powder

I heated the chickpeas and ran them through the processor with all the ingredients, adding the reserved chickpea liquid until it reached desired consistency.  This may be my favorite hummus I’ve made so far.  I really want to make an omelet out of it…. tomorrow night’s dinner?

Today’s lunch at work was odd but worked perfectly.

My rice cakes broke in my lunch bag, but this is just brown rice cake pieces with avocado and almond butter.  I ate it with a hard boiled egg and some sliced pineapple.  I’m pretty sure I’m about to pack the same thing to take tomorrow too.  It totally rocked. :)

  4. Hard to transition to a new work schedule – especially with the double-whammy of the time change! Not gonna lie, I pull some pretty random lunches too! I’m all about not wasting food so if there’s some random stuff in the fridge needing to be eaten, sometimes it all gets thrown together in a lunch-time hodge podge!

    Brown rice cakes/corn cakes with avocado is one of my favorite snacks! And also topped with almond butter with banana slices. Love it. And I cannot believe I’ve never added nooch to my homemade hummus. Shame on me! To be remedied asap.

  15. That lazy lady’s potato salad looks so great!! I’m a huge fan of taking my lunches to work- sometimes i’ll just throw the ingredients in my bag and assemble it at work- that’s when I’m thankful I have my own office – it becomes a bit of an assembly line :)

    I miss being a night owl, though… so sometimes I only get 5 hours sleep because I like to be up ’til midnight with Jason and Basil. they are owls. well, Basil is a dog.

    I think I’m drunk on my afternoon kombucha… ;)

    Cheez + Hummus- Chummus? As in, I want to be “chums” with “chummus?” Well, nonetheless it looks “yummus” and I think I”ll have to try some. I have the true lemon but not the tahini. I do have sesame seeds though…
